5 lbs beef short ribs, cut into 4 oz portions
1 c. soy sauce
1/4 c. rice wine vinegar
3 cloves garlic, peeled and smashed
1 tbsp. fresh ginger, peeled and minced
1/2 c. packed brown sugar
4 c. water
3/4 tsp. crushed red pepper flakes
1/4 c. orange juice
1/4 c. hoisin sauce

Directions:
Preheat oven to 350º.
In a roasting pan, combine short ribs, soy sauce, vinegar, garlic, ginger, brown sugar, water, crushed red pepper, and 2 tbsp orange juice.
Make sure pan is deep enough that short ribs are submerged in the liquid.
Bake uncovered for 3 hrs (meat is tender).
Remove the short ribs from the liquid and cover to keep warm.
Increase oven temperature to 425º.
Skim the fat from the liquid and discard.
Add hoisin sauce to the liquid and bring to boil over medium-high heat.
Reduce the liquid until about 1 1/4 cups remain.
Strain through a fine mesh strainer and discard the solids.
Stir in remaining 2 tbsp. orange juice.
Return the short ribs to the reduced sauce in roasting pan, coating the short ribs well with the sauce.
Bake for 10 minutes until short ribs are heated through and slightly glazed.
Serve hot over jasmine rice.
