Ingredients: 12 slices applewood smoked bacon or other thick-cut bacon 12 sea scallops 2 tablespoons Big Guy BBQ Chicago "Original" Seasoning/Rub or your favorite all purpose BBQ seasoning 4 bamboo skewers, soaked in warm water for about 30 minutes Kosher salt Freshly ground black pepper 2 tablespoons unsalted butter, at room temperature

Directions:Fire up your grill for direct grilling to 350 degrees F.
Pre cook the bacon strips until they just begin to get golden around the edges but still very pliable. Set aside until cool enough to handle.
Season the scallops on all sides with the Big Guy BBQ "Original" Seasoning/Rub. Wrap each scallop in 1 piece of the bacon, securing it through the center with a bamboo skewer. Repeat with the remaining scallops. You should be able to get 3 bacon wrapped scallops per skewer.
When the grill is hot, I like to add some applewood chips just prior to grilling the scallops. It's important to brush the grate lightly with oil to prevent the scallops from sticking which could cause them to rip or tear. Place the scallops on the grill and cook, turning frequently, until just cooked through about 7 minutes total. Transfer to a platter and sprinkle with salt & pepper to taste. Garnish each scallop with a dab of the butter and serve immediately. |

Here is a great recipe that combines the sweet, smokey taste of bacon with the crisp, salty taste of the ocean in the scallop to create an explosion of flavor with just one bite. You can use these as appetizers, as a main course, or paired with beef for a surf & turf entree.
The ingredients are simple and easy to assemble. These cook relatively quickly, so it's easy to make several batches. I must caution you that once you serve a batch of these to family and friends, you will have to keep making them to meet the demand of your hungry guests. They will think that you went to a lot of time and trouble and will come back for seconds and maybe thirds.
