Day 1:
3-6 lb. beef brisket
1 oz. liquid smoke or less
1 tsp. salt

Day 2:
1 tsp. onion salt
1 tsp. garlic salt
Sauce:
1 T. brown sugar
1/2 c. catsup
1/4 c. water
3 T. butter
1/4 tsp. celery salt
1/2 tsp. dry mustard
2 T. Worchestershire sauce
dash pepper

Day 1:
Baste and wrap meat in foil. Refrigerate overnight.

Day 2:
Sprinkle onion salt and garlic salt over meat.
Close foil and bake for 4-6 hours at 300 degrees. (small brisket bake 4 hours; large brisket may take 7 hours)
Make sauce before meat is done.
Mix ingredients for the sauce and bring to this mixture to a boil. Remove the sauce from the heat.
When meat is done, cover brisket with sauce. Refrigerate overnight.

Day 3:
Heat brisket for 1 hour or less at 300 degrees.
