1 onion - chopped
3 C potatoes - cubed
2 cans clams - save juice
2 1/2 C boiling water
4 C hot milk
4 T butter
salt pork or bacon optional
celery/carrots optional
salt and pepper to taste.
1/4 C flour

Directions:
Directions:
Cook onion in a little oil till soft (with salt pork or bacon if used). Layer potatoes, clams, flour, salt & pepper. Add boiling water and cook til potatoes are tender. Add milk, butter, reserved clam juice. Continue cooking until it thickens. May use 1 T butter and 1 T flour for thickening.
