5 cups sliced yellow squash 1 large onion, finely chopped 2 eggs, lightly beaten
1/2 cup milk
2 tablespoons butter or margarine
Salt and pepper, to taste 1/2 cup shredded Cheddar cheese

Directions:
Directions:
Preheat the oven to 350 degrees. Place the squash and onion in a saucepan and add water to a depth of 1/2-inch. Cover and cook, stirring several times, until squash is just tender. Drain well
and mash with a potato masher. Stir in the eggs, milk, butter, salt, and pepper and pour into a greased baking dish. Sprinkle with the cheese. Bake until set, about 25 minutes.
