1 Tbsp olive oil
1 c chopped onion
1 c bell pepper
4 c cooked rice
1-2 cans (10oz) Diced
Tomatoes & Green Chilies
2 cans (15oz) Black Beans
drained and rinsed
1 tsp ground cumin
1 tsp ground Mexican oregano

Directions:
Directions:
Heat oil; sauté onion and pepper till tender. Stir in remaining ingredients and heat thoroughly. Serve immediately right from the pan. For 2nd Day Casserole, Add the following ingredients to the Beans & Rice “leftovers”, 1 can corn, 1-cup mozzarella cheese. Mix well and place in casserole dish. Sprinkle top with desired amount of cheddar cheese. Bake at 375° for approx. 20 minutes.
