Start cooking 3 to 5 hours before you plan to serve. Preheat over to 375 degrees. Put in roast, fat side up in shallow pan. Put roast in preheated over and cook exactly 1 hour. At the end of 1 hour, turn oven off. Do not open oven at any time. One and one-fourth hours before carving time, turn oven to 300 degrees and cook exactly 45 minutes longer. Place on carving board and prepare gravy. This works on any size meat.
