Directions:Cook fatback and lots of onions together. Add a can of salmon (or mackerel), water and macaroni. Throw in anything leftover in the frig. Cook until noodles disintegrate. Thin with a little milk, if needed. Add a splash of any wine that might be opened. Season with garlic and a little of every spice in the cabinet. |

Notes: We "inherited" Walter Williams. He was doing yard work for Doc when Doc died, and Walter just stayed on - and on. He loved "Mr. Bob', who often cooked for him. If Bob cooked anything, Walter liked it. Walter became too old and disabled to work, and was living in a house on Five Notch Road. The house was fast deteriorating due to age, the elements and the fact that Walter was gradually burning parts of it as firewood in winter. Bob regularly visited, taking him food, clothing, covers and even electric heaters. They would always share a meal on these visits. Today the house no longer stands, and mercifully, Walter has a better place to live. For a while he was at "Spice of Life" Assisted Care Home in Augusta. In May '95 I saw him at Kroger with his granddaughter, and he looked so good I did not recognize him - spotlessly clean, happy, and well-fed, and dressed in white shorts, red and white striped shirt, white socks and a white wide-brimmed hat! Since then he has moved to North Augusta Garden Apartments, where we have helped him get some furniture. Walter's good for the ego - he thought we (especially Bob) could do anything!
One more story about Walter: Once when Bob bought a new car, Walter got his old one - a yellow Capri, often billed in commercials (when it was new) as the "sexy European". He would tool around town in that sporty little car - always wearing shorts and a wide-brimmed hat, looking so c-o-o-l! Luckily the Capri died before Walter. From all appearances he is doing well. Walter is about 5' 7", 130 pounds - no fat, all muscle, and old - we're not sure exactly how old! Walter loved Bob almost as much as he loved Doc, and that's a lot!
