Tagliatelle with Sausage Recipe

Sea salt
4 sage leaves
1 sprig of rosemary
3 hot Italian sausage links
3 sweet Italian sausage links
3 T. olive oil
1 lb. fresh tagliatelle
3 plum tomatos diced and reserve juice
3/4 c. heavy cream
2 T. butter
1/4 c. peas blanched
3/4 c. grated Parmesan

Cook pasta
Chop sage and rosemary together into a paste. Reserve. Remove the casings from the sausage and knead the meat together by hand.
Warm the olive oil in a saute pan, add sausage and cook until brown. Add tomatos and sage-rosemary mixture to the sausage. Stir and cook 2 min. Add cream, butter, peas and parmesan. Cook 1 min.
Add pasta and toss. Serve with pepper and cheese at the table.
