16 cups sliced cucumbers
4 - 6 medium sized onions, sliced
Coarse salt
Ice water




Brine:

1 quart vinegar
4 cups sugar*
2 Tbs celery seed
2 Tbs mustard seed
1 tsp turmeric (optional)

Directions:
Directions:
Layer cucumbers and onions, sprinkling each layer with coarse salt. Cover with ice water. Let stand for 3 hours. Drain completely. Combine 2 cups water, vinegar, sugar, celery seed, mustard seed and turmeric. Stir until the sugar dissolves; then bring to a boil and boil for 3 minutes. Add the cucumbers and onions and bring just to the boiling point. Don't boil because this will make cukes soft. Pack in sterilized jars and seal. Ready to eat when cooled.
