Carrot Cake Recipe

4 cups grated carrots
2 cups flour
2 tsp soda
2 tsp baking powder
1 tsp all spice
1 shake of salt
4 eggs
2 cups sugar
1 cup oil
cup chopped nuts
8 oz. cream cheese
1 cup oleo
1 lb. powdered sugar
Add vanilla, rum or any other flavored extract

Beat sugar and eggs until thick and pale. Add oil. In a separate bowl, mix flour, soda, all spice and salt. Add to egg mixture and fold in with a spoon slowly. Add carrots and nuts. Put in pan and bake 45 50 minutes in a cake pan or 35 minutes in a loaf pan or flat pan.
Beat together ingredients for icing with a fork and spread on the cake after it cools.
