2 medium sized yams, light or dark
2 Tbs. butter, plus 1/4 cup butter
1/2 cup sugar, plus 1 cup sugar
1 cup brown sugar
1 Tbs. cinnamon
1 Tbs. vanilla
4 eggs
1 Tbs. frozen orange juice concentrate
1/2 to 3/4 cup evaporated milk
2 unbaked pie shells

Peel yams, cover with water in a saucepan and bring to a boil. After some of the water has boiled down (about 10 minutes before yams are cooked to the easy mashing stage), add 2 T butter and 1/2 cup sugar to the water.

Finish cooking the yams; drain. Mash the yams in a mixing bowl; add 1/4 cup butter, the remaining granulated sugar, brown sugar, cinnamon, vanilla, eggs, orange juice concentrate and 1/2 cup evaporated milk. Beat well.

Add more milk if needed to make the filling the right consistency. Pour into pie shells.

Cook in preheated 350 oven for 30-45 minutes until toothpick inserted in center comes out clean. Cool.

The pie will be puffy immediately out of the oven but will fall slightly as it cools.
