1 pre made piecrust
4 Tbsp butter
2 tsp fresh thyme
or 1 tsp dried thyme
5 lg Granny Smith apples peeled
cored-thinly sliced or chunked
2 large onions
Salt and pepper
8 oz sharp Cheddar, Lancashire, or farmhouse cheese, crumbled or sliced

Directions:
Preheat oven to 350 degrees. Line tart pan or pie pan with 1 crust and sprinkle with salt/pepper. Sauté onions in butter, add apples, cook until slightly soft (if apples are sliced thin this step can be skipped) Layer apples and onions into crust. Sprinkle with thyme. Cover with cheese Cut leaf shapes out of second pie crust if you like and lay on top of cheese. Cook 30–40 minutes until cheese is brown and crusted. Serve warm
