1/3 c. mayo
2 T. blue cheese or Gorgonzola
1/2 t. prepared horseradish
1/4 t. pepper
cooking spray
1/2 ob. round tip steak strips (aka breakfast steaks, minute steaks)
1/8 t. salt
4 c. finely chopped lettuce
1 c. halved grape tomatoes
1/4 c. thinly sliced red onion (I like these sautéed first)
4 (10-inch) flour tortillas

1. Combine mayo, blue cheese, horseradish, pepper in small bowl; cover & refrigerate at least 30 min.

2. Heat skillet over med-high. Coat pan w/ cooking spray. Sprinkle steak w/ salt & pepper. Add steak to pan - sauté' 2 min per side if thinly sliced. Let stand 5 min. Cut into narrow strips.

3. Combine lettuce, tomatoes, and onions in bowl. Spread 2 T mayo mix evenly over each tortilla. Divide steaks and lettuce mixtures evenly among tortillas; roll burrito style.
