Ingredients:  
1 small to medium pumpkin. Cut off top, clean out
seeds and pulp.

Lightly brown 1 pound of ground beef
Add:
½ c. chopped celery
½ c. chopped onion
¼ c. diced green onion
1 tsp. salt
Dash of pepper
Cover and simmer over low heat about 10 minutes or
until vegetables are tender.
Add:
2 c. cooked rice
1 can cream of chicken or mushroom soup
1 can (4 ounces) sliced mushrooms
2 tbsp. brown sugar
2-4 tbsp. of soy sauce

Directions:
Directions:
Put mixture in pumpkin, replace lid, place on baking
sheet in a 400 degree oven. Bake until pumpkin is
tender (allow one to 1- 1 ½ hours). Cut in sections or
scoop out to serve. Be sure to scoop a little of the
cooked pumpkin with the filling.
