1 1/2 c vegetable oil
3/4 c white wine vinegar
1/2 c sugar
1 1/2 T onion, grated
1 T dry mustard
1 T poppy seeds
1 1/2 tsp salt

1 bag baby spinach
1/2 head iceberg lettuce
3/4 lb. bacon, cooked
3/4 lb. swiss cheese, grated
3/4 lb. mushrooms, sliced
1 purple onion, chopped

Mix together all dressing ingredients and refrigerate overnight, or
all day.

In a salad bowl, mix together spinach, lettuce, bacon, cheese,
mushrooms, and purple onion.

Add dressing only when ready to serve.

Please don't make this one until the Ecoli scare is over. This
is a yummy salad, but it is a little time intensive. Great for
taking to get togethers or parties. It makes a ton of dressing.
I usually don't pour it all on. Use your own discretion about
how much bacon, cheese, onion, mushrooms, etc. you put in.
I usually just eyeball it.
