1 c flour
1/3 c butter
3 tsp baking powder
tsp salt
tsp nutmeg
2 c (2 medium) cubed or chopped pears
c milk
3 Tbsp oil
1 egg

Line 12 muffin cups with baking cups or spray. In large bowl, combine dry ingredients and mix well. Add pears and toss to coat. In small bowl, combine milk, oil and egg and beat well. Add to flour mixture and stir just until dry ingredients are moistened. DO NOT OVERMIX. Divide batter into baking cups and set aside.


3 Tbsp sugar and 1 tsp finely grated lemon peel

In small bowl, combine sugar and lemon peel and mix well. Sprinkle evenly over muffin batter in cups. Bake in pre-heated 400 oven for 15 - 20 minutes or until toothpick inserted in center comes out clean and edges are golden brown. Remove immediately.
