1 c. butter
1 c. sugar
1 egg
1 tsp. vanilla
2 tsp. poppy seeds
1 tsp. lemon zest
1/4 tsp. salt
2 c. flour
estra sugar

Preheat oven to 375.

In a large mixing bowl beat the butter with an electrix mixer on medium speed for 30 seconds. Add the 1 c. sugar, beat until combined. Beat in the egg and vanilla until combined. Beat in poppy seeds, lemon zest, salt and as much of the flour as you can with the mixer. Using a wooden spoon, stir in any remaing flour.

Cover and chill for 1 - 2 hours, or until easy to handle.

Shape dough into 1-inch balls. Place balls 2 inches apart on an ungreased cookie sheet.

Using the bottom of a glass dipped in the extra sugar, slightly flatten balls to 1/2 inch thickness.

Bake for 8 to 10 minutes or until edges are firm and bottoms are lightly browned. Cool on cookie sheet for 2 minutes, then transfer to wire rack.
