Beat eggs and add flour and salt. Mix well and knead until soft. Let dough rest for 1/2 hour. On a floured surface, roll the dough out as thin as possible. Let dry for about an hour. Fold dough into a tight roll and cut with a sharp knife into noodles. Separate strands of noodles and let dry. Drop into boiling broth and cook for 15 minutes. If storing noodles, dry thoroughly and put into a plastic bag and cover lightly.
Mom's soup always tasted so good because of these noodles.
