2 large ripe tomatoes, peeled and seeded
1 large green pepper, or sweet red pepper, seeded
1 clove garlic
1/2 c. mixed herbs: chives, parsley, basil, tarragon
1/4-1/2 c. extra virgin olive oil
3 T. lemon juice
3 c. chilled water
1 sweet onion thinly sliced
1 1/2 t. salt
1/2 t. paprika
1 cucumber,peeled, seeded and diced

Directions:
Directions:
Put the first 4 ingredients in a bowl or processor and chop fine.
Add the rest of the ingredients and chill.

You can process the vegetables quite fine and when served pass chopped peppers, onions and tomatoes.

The soup will probably require more salt.

We had this in Spain and we liked it a lot. They served it with the chopped vegetable that they passed.
