1-1/2 c. diced peeled potatoes
2 chicken bouillon cubes
2 tbl. butter
1/4 c. diced green pepper
2 tbl. flour
1 tsp. salt
dash of pepper
2 c. milk
2 c. shredded cheddar cheese
chopped parsley for garnish

In medium saucepan, combine potatoes and 2 cups water, bring to boil. Reduce heat and simmer 15 minutes until potatoes are tender.
Drain potatoes, reserving 1-1/2 c. liquid. Add bouillon cubes to liquid, stir to dissolve.
Melt butter in same saucepan. Add green pepper and saute until tender - about 5 minutes.
Remove from heat. Stir in flour, salt and pepper. Gradually stir in potato liquid and milk.
Bring mixture to boil, reduce heat and simmer for 5 minutes.
Serve topped with parsley
