Cheesy Bread on the Grill Recipe

1 loaf Italian bread
1 stick butter, softened
cup sun-dried tomatoes in oil, drained
2 Tblsp pesto
1 clove garlic
1/4 tsp salt
1/8 tsp pepper
2 cups shredded provolone cheese, or any shredded Italian cheese blend

Cut bread in half lengthwise.
In food processor, pulse all ingredients except for bread and cheese until thoroughly blended and tomatoes are chopped. Scrape into bowl and stir in 1 1/2 cups of cheese.
Heat grill. Grill bread, cut side down, until toasted, about 1-2 mins. Spread butter mixture onto cut side of each half, dividing equally. Sprinkle remaining cup cheese on top.
Grill bread, cut side up, over indirect heat, with grill covered, until topping is melted, 8-10 minutes. Let cool slightly before cutting into slices.
