"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Rub the brisket with the salt, garlic powder, and pepper. Place in a large roaster with bay leaf and about 2 inches of water. Place in a 250º oven for about 8-10 hours. As water evaporates add just enough too keep it from cooking dry. (this make a great dipping liquid for the sandwiches) When the brisket is tender remove from roaster and slice across the grain.
