2 c. fresh tart plums, pitted and cut in half
1 c. sugar, divided
c. butter, softened
t. lemon extract or 2 t. fresh lemon juice
2 eggs
1 c. flour
1 tsp. baking powder
tsp. salt
tsp. cinnamon
2 T. sugar
1 tsp. cinnamon
sour cream or whipped cream for topping

Arrange the halved plums, cut-side up in the bottom of
a greased 7 x 11 or 9 square pan. Sprinkle with c.
sugar. Preheat oven to 375.
In a large bowl cream together the butter, lemon extract
or juice and remaining 1 c. sugar. Add eggs, one at a
time, beating well after each addition. Sift flour into the
bowl and add the baking powder, salt and t.
cinnamon. Stir until well blended. Spoon batter over
the plums. Mix 2 T. sugar with 1 t. cinnamon and
sprinkle over the batter. Bake for 35-45 min. or until
cake pulls away from sides of pan. Serve warm or cool,
topped with sour cream or whipped cream.
