6 cups of drained, cooked pumpkin (slightly mounded over the top of the cup)
6 eggs
3 cups of sugar
2 tablespoons of sweetened condensed milk
2 tablespoons of lemon extract
2 tablespoons of nutmeg
1/2 stick of butter

about 10 unbaked pie shells

Directions:
Directions:
Beat vigorously all ingredients to make as smooth as possible. Fill each pie crust with mixture and bake at 350° on an uninsulated cookie sheet for 45 minutes to 1 hour (until pie crust is brown)

Cool, top with whipped cream if desired. Makes about 10 or more pies.
