your favorite barbecue sauce
2 stalks celery
a couple of onions
peppercorns
2 bay leaves

Start with a well trimmed brisket. Cover with cold water. Add 2 stalks of celery, at least one good sized onion, cut up. 4-6 or more peppercorns, 2 bay leaves. Boil the brisket and simmer for 3 hours, skimming off the foam.
Cool and chill *well*. Slice the brisket while it is chilled. Slice across the grain into approx 1/4 in slices. Pack it firmly into a 9x13 glass pan or casserole keeping the slices upright. You can freeze it now or bake it. If you are going to freeze it, pour over some of the barbecue sauce, cover with layer of waxed paper (to keep the foil from contacting the bbq sauce) and then a layer of foil, and freeze. Prior to cooking it, add more sauce, cover and bake.
Cover and bake at 375 degrees for 1 1/2 hours. Uncover during the last 1/2 hour of cooking. If frozen, cook for a bit more time.
