1 c. sugar
1 stick butter (I use "I can’t believe it's not butter" instead)
1 c. flour
1 egg
1/2 tsp. vanilla
Pinch salt
1 tsp. baking powder
Whatever fruit you're using (apples, pears, nectarines, peaches, plums, bananas, blueberries, kiwi, or any combination of these or other fruits)
Sugar & cinnamon;
Allspice and/or nutmeg, optional

Cream the sugar and butter. Add egg and vanilla and beat. Combine flour, pinch of salt, baking power; sift dry ingredients into egg mixture. Spread in a squarish or rectangular cake pan. Overlap thinnish-sliced pieces of fruit; spread THICKLY with sugar & lightly with cinnamon; optionally also with allspice & nutmeg. Bake at 350 degrees for 45 minutes to 1 hour and 15 minutes.

This recipe was given to me in the 1980s by Frieda Bronstein, a physical therapy assistant at the PT practice I went to in Bryn Mawr. Frieda was a fabulous cook who later left physical therapy to become a caterer.
