Seven Minute Frosting:
1 1/2 cup sugar
1 1/4 tsp cream of tartar
1/8 tsp salt
2 egg whites
1/4 cup water
2 tsp vanilla
1/3 cup pecans
1/3 cup dried figs or dates in bits
1/2 tsp almond

Mix all frosting ingredients together in a bowl over simmering water. Beat steadily over low heat until frosting stands in peaks, about 5-7 minutes (no more). Remove from heat, continue to beat until thick enough to spread, add vanilla and stir in. Divide frosting in half. Use 1/2 for filling by mixing nuts and figs together and blend with frosting. Stir well and spead onto bottom layer. Put top layer on and frost top and sides with the reserved frosting. Serves: 8-10 Prep 30-45 min.
