3 qt. water
2 c. (1 lb.) dried Navy or Great Northern Beans
1 ham bone or small shank end of ham
1 large onion, minced
3 stalks celery (with tops), chopped fine
salt and pepper

Directions:
Directions:
In large kettle, soak 2 cups beans overnight in 3 quarts water.

Then add: ham bone, onion and celery.

Heat to boiling. Cover. Simmer 4-5 hours until beans are tender and liquid partially cooked down. Season to tasted with salt and pepper.

For a smoother soup put through a sieve.
