1 1/2 c. sifted all purpose flour 1 c. sugar 1 tsp. baking powder 1 tsp. soda 1/2 tsp.salt 2/3 c. salad oil 2 eggs 1 c. finely shredded carrots 1/2 c. crushed pineapple with syrup 1 tsp. vanilla
Mix until moistened. Beat 2 minutes at medium speed. Bake in greased and lightly floured 9x9x2 pan 350 degrees for 35 minutes or until done. Cool 10 minutes. Remove from pan. Cool well and frost with cream cheese frosting.
