4-5 lb first cut brisket of beef
1/2 c flour
kosher salt
ground black pepper
vegetable oil as needed
2-3 T of any vinegar including balsamic
2-3 T dark brown sugar
1 8 oz can tomato sauce
2-3 T ketchup
1 T Worcestershire sauce
3/4 - 1 c boiling water OR 1 can of dark beer
2 bay leaves
1/2 - 3/4 tsp. dried thyme
2-3 onions cut in thick slices

Preheat oven 350º
Combine flour, salt and pepper. Wipe brisket with damp paper towel. Dredge meat in flour seasoned with salt and pepper. Heat oil in large roasting pan. Brown the meat, starting fat side down, on both sides to seal the juices. Spread minced garlic over the top. Pour vinegar over the meat. letting it drip down the sides. Add all the remaining ingredients except the onions.
Bring to a slow boil, basting the meat until all the ingredients are blended. Cover the pan and place in oven for 2- 2 1/2 hours until almost tender. Continue to baste occasionally adding small amount of boiling water if needed.
Towards the end of braising time lay the onions in a single layer over the top of meat. Baste with gravy and return to oven for 20 minutes or until the onions are tender.
Adjust the seasoning and let stand for 1/2 hour.Slice across the grain.
