14 eggs
4 c sugar
25 oz pumpkin
¾ Tbsp salt
1 ½ Tbsp baking soda
¾ Tbsp cinnamon
2 1/3 c flour
1 ½ lb cream cheese
¼ lb butter
1 Tbsp vanilla
1 ½ c powder sugar
2 c whipping cream
1 tsp vanilla
Powder sugar to liking

Directions:

Mix eggs and sugar. Add pumpkin. Mix thoroughly.
In separate bowl mix dry ingredients. Gradually mix dry ingredients with pumpkin mixture. Preheat oven to 350 degrees. Spray pan with Pam, lay wax paper down. Pour mixture in pan and bake for 15 minutes. Put dishtowel down, sprinkle with powdered sugar, tip cake upside down on towel. Remove wax paper and roll with towel. Beat cream cheese; add butter, vanilla and powdered sugar gradually. Mix thoroughly. Unroll cake and spread cream cheese mixture within ½ inch to inch thick. Re-roll cake, even cream mixture on end of cake; put fold side down on wax paper. Mix whipping cream to stiff peak, add vanilla and powdered sugar. Top Pumpkin roll. Refrigerate till served.
