1 large cauliflower-cut into florets
1 c. round buttery cracker crumbs
1/2 tsp salt
1 1/2 c (6oz) shredded cheddar cheese - divided
3 c. water
1 med onion - chopped
1/4 c. butter or margarine - melted
1/2 c. green pepper - chopped
1 Tbsp sugar
1 can (16oz) diced tomatoes
1tsp salt
1/2 tsp pepper

Combine cauliflower salt and water in a large saucepan, bring to a boil, cover and cook for 5 minutes or until tender. Drain and set aside. Combine butter, sugar, salt, pepper, and crackers in a large bowl, stir in the cauliflower, 1 cup of cheese , onion, peppers and tomatoes. Spoon into a lightly greased 13 X 9 X 2 baking dish. Bake at 350F for 35 minutes. Sprinkle with remaining 1/2 cup cheese and bake 5 more minutes.
