1 cup oil
1 tsp. Cinnamon
2 cups sugar
1 tsp. soda
3 eggs
1 tsp. Vanilla
2 cups grated carrots
1 cup crushed pineapple with juice
1 ½ or 2 cups flaked coconut
3 ½ cups flour
2 cups chopped nuts

Directions:

Cream oil, sugar and eggs. Add other ingredients and mix well. Makes a very large cake. Bake at 350 degrees for one hour. Top with cream cheese frosting or caramel sauce and whipped topping or ice cream.
