2 1/2 lb. shoulder of leg of lamb (not stewing lamb)
1 onion
Salt & pepper to taste
Juice from 1 lemon
1 lb. prunes (soaked for several hours or overnight in water)
2 T. sugar
Water the prunes were soaked in

Directions:
Directions:
Marinate the lamb, trimmed and cut into small pieces for at least an hour in the lemon juice with onion pieces on top. Discard onion. Cook meat briefly in marinade; add prune water and enough additional water to cover the lamb. Place in covered Dutch oven and simmer for 40 - 45 minutes. Add the prunes and sugar and a little lemon juice, bring to a boil once before serving. Serve with rice or thin noodles.
