1 1/2c. all purpose flour
3/4c. firmly packed brown sugar
3/4 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/8 tsp. ground cloves
1c. shredded unpeeled zucchini
1/2c. milk
2T. vegetable oil
1 tsp. vanilla extract
1 egg
1/4c. toasted chopped walnuts
vegetable cooking spray

Combine flour, brown sugar, baking soda, salt, cinnamon, nutmeg and cloves. Add zucchini, milk, oil, vanilla and egg; stir well. Stir in walnuts. Pour batter into an 8" square baking pan coated with cooking spray.
Bake at 350F for 35 minutes or until toothpick comes out clean. Cool completely in pan on wire rack.
