Minestrone Soup Recipe

Dixie Justice


5-6 slices bacon                           
1 tsp dried basil (or 1/4 C. fresh)
1 1/2 C. chopped cabbage             
1 onion, chopped                           
1 can garbanzo beans  
1 can kidney beans                  
1 clove garlic, chopped/pressed      
2 carrots, sliced                            
1 rib celery, chopped
1 potato, diced
3/4 C. pasta, uncooked
6-8 C. chicken broth
16 oz. chopped tomatoes
salt/pepper to taste
parmesan cheese (optional)

Saute bacon.  Set aside.  Saute cabbage, onion,
carrots, celery and garlic in bacon drippings.  Add to broth in pot with the tomatoes, potato, pasta and bacon.  Bring to a boil, cover and simmer 30+ minutes until tender.  Add beans, basil, salt and pepper.  Simmer 10 min.  Serve soup sprinkled with cheese (optional).
