Lazy Oatmeal Cake Recipe

1 1/4 cups boiling water
1 cup oatmeal
1/2 cup shortening
1 cup sugar
1 cup brown sugar
1 tsp. vanilla
2 eggs
1 1/2 cups flour
1 tsp. soda
1/2 tsp. salt
1/2 tsp. cinnamon
1/4 tsp. nutmeg

Pour boiling water over oats. Let stand for 20 minutes. Beat shortening and add sugars. Beat until fluffy. Blend in vanilla and eggs. Stir in oatmeal. Sift dry ingredients together and add to creamed mixture. Mix well. Pour into well greased "dripper" cake pan. Bake at 350 for 55 to 60 min. Do not remove from pan.

Frosting: Combine 1/2 cup butter, 1 cup firmly packed brown sugar, 6 T. canned milk, 2/3 cup chopped nuts and 1 1/2 cup coconut. Spread over cake. Broil until bubbly. Serve warm or cold.
