2 cups cubed Velveeta cheese
1 lb. bacon
1/4 cup margarine
3 stalks celery
1 1/2 cup diced onion
3 Tablespoons flour
4 cups cubed potatoes (or cheat and use shredded
hash browns)
5 cups milk
1 tsp. salt
1/4 tsp. pepper

Directions:
Directions:
In 3 quart saucepan melt margarine, stir in onion and celery, cook to tender. Stir in flour until smooth, cook about 1 minute. Slowly add milk, then the potatoes, the salt and pepper. Cook 25 – 30 minutes. Stir in cheese and crumbled cooked bacon. Let simmer until cheese is melted and serve.

I cook and crumble the bacon and serve it on the side so the bacon stays crunchy.
