2 c. - raisins
1 tsp. - baking soda
2 c. - water
2 c. - flour
1 c. - unsweetened applesauce
1 tsp. - cinnamon
2 - eggs
tsp. - nutmeg
2 T. - liquid sweetener
1 tsp. - vanilla
c. - cooking oil
tsp. - salt

Cook raisins in the water; drain off remaining water. Add applesauce, eggs, sweetener and cooking oil; mix well. Blend in baking soda, flour, cinnamon, nutmeg, salt and vanilla; mix well. Bake in a 9 x 13 pan at 350 until toothpick inserted in center comes out clean.
