1 redi-made graham cracker pie crust
6 T. fresh key lime juice
1 package unflavored gelatin
2 1/2 c. heavy cream
10 1 oz. squares of white Baker's chocolate, chopped
2 1 oz. squares white Baker's chocolate, grated
3 8 oz. Philly Cream cheese blocks, softened
1 c. sugar
1 1/2 T. lime zest

Directions:
Directions:
Squeeze lime juice into a glass bowl and add gelatin. Set aside. Bring 1/2 cup heavy cream to simmer in heavy saucepan, remove from heat and add chopped chocolate, stirring until smooth. Add lime juice/gelatin mixture and set aside to cool. In a mixer add cream cheese, sugar, and lime zest - beat until smooth - then slowly add cooled white chocolate mixture and beat again. Set aside and clean and dry beaters. Beat remaining 2 cups of heavy cream to stiff peaks, fold into white chocolate mixture and spoon into pie crust. Cover and freeze overnight - use toothpicks to prevent cover from sticking to pie. Remove and uncover - sprinkle grated white chocolate on top and serve.
