SALAD:
1/2 head of nappa cabbage-shred fine (you can use regular cabbage)
4 chopped green onions
1 pkg. Raman noodles-any flavor
4 oz. package slivered almonds
2 T. sesame seeds
DRESSING:
1/2 c. light olive oil
1/4 c. rice wine vinegar (regular vinegar works too)
Seasoning packet from Raman noodles
1/2 c. sugar
2-3 T. soy sauce
Mix together in a jar with tight lid

Toast almonds and noodles in a dry frying pan, add sesame seeds towards end as they brown quickly.
Chop cabbage and onions.
Toss all together, add dressing just before serving.

I think this is called "Chinese cole slaw" because of the soy sauce! I learned it from a friend who summers in Harpswell and have shared it with many as it is so popular!
