1 lb. butter,
2 lbs. powdered sugar,
8 egg yolks,
1 tsp. almond extract,
6 egg whites,
3 lbs. flour.

Cream butter,
Add sugar, beaten egg yolks, & flavoring.
Then add beaten egg whites.
Next add flour.
Roll thin as a pencil and shape into S's.
Brush tops with glaze of 1 egg white and 1 tbsp. water beaten together slightly.
Sprinkle with sugar mixture (4 tbsp. sugar and 1/2 tsp. cinnamon)
Or roll in powdered sugar.

Place on cookie sheets and cool overnight.

Bake at 350 for 12-15 minutes
