1/3 c. all-purpose flour
1 tsp. salt
1/4 tsp. black pepper
2 lbs. stewing beef
1/4 c. vegetable shortening
4 c. boiling water
1 T. lemon juice
1 T. Worcestershire sauce
1 tsp. sugar
1 large sliced onion
2 bay leaves
1/4 tsp. ground allspice
12 small peeled + trimmed carrots
12 small white onions
8 small peeled new potatoes

Directions:

Combine flour, salt, and pepper on waxed paper. Roll beef in mixture; shake off excess.
Melt shortening in a heavy-bottomed pot. When fat starts to smoke, carefully add beef, only 5 or 6 pieces at a time. Brown all sides, and then remove. After the last batch, return meat to the pot; stand back, and slowly pour in the boiling water.
Stir and add lemon juice, Worcestershire sauce, sugar, sliced onion, bay leaves, and allspice.
Lower heat; cover; simmer for 1 1/2 to 2 hours, until meat is tender.
Add carrots, white onions, and potatoes; cook for 20 to 25 minutes, until easily pierced with a fork.
Lable stew into large bowls, and serve.
