1/2 lb. Monterey jack cheese (grated)
1/2 lb. cheddar cheese (grated)
8 eggs slightly beaten
1 - 5 oz. can evaporated milk
2 - 4 oz. cans chopped green chilies
1 lb. cooked ham, sausage or bacon (optional)

Directions:

Heat oven to 350º
Combine eggs, cheese and milk.
Line 9 x 13 glass dish with the chilies and meat.
Cover with the cheese mixture.
Bake for 40 minutes or until eggs are cooked.
