1 (9 inch) pie shell, unbaked
6 eggs, beaten
8 slices of bacon, crispy
1 cup (4 oz) shredded Swiss cheese
1 1/4 cup half and half
1/2 tsp salt
1/8 tsp nutmeg
1/8 tsp pepper
mushrooms, sliced (optional) enough to cover the bottom or to your liking.

Directions:

1. Preheat oven to 425º
2. Beat the eggs in a small bowl.
3. Brush pie shell with small amount of the beaten eggs. Prick bottom and sides with a fork. Bake the shell 5 minutes at 425º. Cool on wire rack.
4. Decrease oven to 350º.
5. Sprinkle bacon and cheese into pie shell.
6. Beat the remaining ingredients together till well blended.
6. Pour into pie shell.
7. Bake in the preheated oven 350º for until knife inserted halfway between center and outside edge comes out clean. 35 - 40 minutes.
8. Let stand 10 minutes before serving.

This is the quiche that Bob makes for Christmas morning.
You can use any meat that you like. we use sausage or ham as alternatives.
