Aged kimchi (store bought kimchi in a container is sufficient);

Kimchi brine;

Meat of choice; and

Gochujang;



(optional) Ingredients:

Meat or seafood based soup stock;

Onion;

Scallion;

Vegetable of choice (avoid vegetables that have a lot of water so the end product doesn’t become soup); and

Tofu.

In a small pot, add a handful of kimchi, meat, gochujang (start with a spoonful), and kimchi brine (and slices of onion).

Add water or soup stock so that it just covers all the ingredients.

Bring it to boil, make sure the meat is fully cooked, then turn the heat down to medium.

Let it simmer for 2 to 3 minutes (simmering longer is okay, but the kimchi will become very soft and lose its flavor).

While simmering:

Add more gochujang if not salty enough.

Add more kimchi to make it more sour or to have a crunchier texture.

Add optional ingredients.
