3 lbs russet potatoes, pricked with a fork
1/4 c. softened butter
1/2 c. milk
3/4 cup whipping cream (may use up to 1 cup)
3 oz. Gruyere cheese, grated (may use more to taste)
3 T. parmesan cheese, (may use more to taste)
Fresh chopped parsley

Preheat oven to 400 degrees. Place potatoes directly on oven rack and bake 45-60 minutes or until easily pierced with the fork. Remove from oven, cool slightly and halve lengthwise. Grease 3 quart baking pan. Scrape potato flesh. Discard peels or save for another use. Mash potatoes flesh with hand masher or use a ricer until smooth. Add butter and milt and stir until blended. Spread into prepared pan. Increase oven temp to 500. With electric mixer, whip cream to soft peaks and fold Gruyere by hand. Spread evenly over the potatoes and sprinkle with parmesan. Bake until heated thoroughly and topping is oven brown, about 10 minutes. Garnish with parsley and serve warm.
