filo dough (found in the frozen section of grocery store)
2 packages frozen chopped spinach
olive oil
2 large sweet onions
parsley
1/2 lb. American cheese
6 eggs beaten
2 sticks butter
salt and pepper to taste
pastry brush

Directions:
Directions:
1. Drain off all juices from spinach and set aside.
2. Heat olive oil and sauté onions and when soft add Spinach and sauté 5 minutes more.
3. Mix eggs, cheese, salt, pepper and parsley to mixture.
4. Butter a 13x9 pan and butter 8 pieces of filo dough for bottom layer. Sheets of filo dough should be folded in half to fit in 9x13 pan.
5. Pour spinach mixture on layers
6. Top with 8 more buttered pieces of filo dough 7.Get ends down on top layers of filo dough.
7. Bake uncovered at 350* for 40 minutes.
8. Cut when cooled carefully with a buttered knife.

This recipe been has been our family for about 60 years. Nana Anna had a Greek friend and they would exchange Italian recipes for Greek recipes.
