3 Bananas, very ripe
1/2 c butter, room temp
3/4 c Sugar
2 lg Eggs, lightly beaten
1 1/2 c Flour
1 t baking soda
1/2 t Vanilla
1 c Walnuts, lightly roasted
1/2 c Raisins, optional

Directions:
Directions:
Preheat oven 350º. Prepare loaf pan.
Lightly roast walnuts in a skillet, continuously stirring so they won't burn. Cool to room temperature.
In a mixing bowl, cream butter and sugar. Mash bananas with fork until consistency of chunky apple sauce and add to batter with eggs. Mix until well blended. In seperate bowl, whisk flour and soda. Then add to butter. Add vanilla. Pour into pan and bake for 55-60 minutes
